Biscuit Tukdi also known as Shakarpara or Diamond Cuts is a mildly sweet deep fried snack.

Biscuit Tukdi is a crispy, crunchy snack prepared during festivals like Diwali or Deepavali.

Shakarpara or Biscuit Tukdi is a very popular snack among the Konkani and Maharashtrian communities.

Let us now see how to prepare these delicous Biscuit Tukdis.

Firstly, take refined flour (maida), put it through a sieve to remove the lumps and collect it in a bowl.

In a bowl, take sugar (shakkar).

Salt (Namak).

Water (Paani).

Ghee (Clarified Butter).

Baking Soda.

In a bowl, mix sugar (shakkar), salt (namak) and baking soda.

Heat ghee (clarified butter).

Add the ghee (clarified butter) to the mixture of water (paani), salt (namak), sugar (shakkar) and baking soda.

Now, add refined flour (maida) to the mixture.

Mix everything properly and make a dough.

Make balls with the dough.

Dust some refined flour (maida) over the ball.

Roll the ball with a rolling pin (belan).

Now, cut it into strips with a tukdi/shakarpara cutter.

Then, cut it in a slant direction in order to get diamond shapes.

Similarly, prepare more diamond cuts / tukdi / shakarpara.

Heat cooking oil (tel) in a kadhai (wok).

Once the cooking oil (tel) is hot, put the tukdi / shakarpara / diamond cuts.

Once you put them in hot cooking oil, reduce the gas flame to medium and fry it over medium heat. Otherwise it will burn. As soon as you put them in the cooking oil, they will puff up. Keep flipping the tukdis or shakarpara so that they cook evenly.

Once the bubbles around the tukdi or shakarpara reduce to a bare minimum, it means they are cooked and can be removed. Remove it in a steel sieve like the one shown below.

Similarly, cook the other biscuit tukdi / shakarpara / diamond cuts.

Step 1

Take 250 grams refined flour (maida) and put it through a sieve so that there are no lumps.

Heat 45 ml ghee (clarified butter). Take 45 ml water and add 2 tsp sugar (shakkar), 1 tsp salt (namak) and 0.5 grams or a pinch of baking soda.

After they dissolve, add 45 ml ghee (clarified butter) and finally add the refined flour (maida). Mix everything properly and make a dough. Make balls from the dough.

Dust little refined flour (maida) over the ball and roll it with a rolling pin (belan). With a tukdi / shakarpara cutter, make thin strips and then again make thin strips in a slant direction so that you have small diamond shapes.

Heat cooking oil (tel) in a kadhai (wok), put the diamond shaped pieces and turn the gas flame to medium. The tukdi or shakarpara will puff up. Keep flipping them till the bubbles near them almost disappear.

Once they are completely cooked, remove them in a steel sieve to get rid of excess cooking oil (tel).
