2 Cups Refined Flour (Maida)
1/2 tsp Cinnamon Powder (Dalchini Powder)
1/2 tsp Green Cardamom Powder
1/2 tsp Cloves Powder (Lavang Powder)
15 (Chopped) Cashewnuts (Kaju)
15 (Chopped) Almonds (Badam)
15 (Chopped) Pistachios (Pista)
2 tsp Cocoa Powder
1 cup Powdered Sugar (Shakkar)
2 tsp Vanilla Extract
1 cup Milk (Doodh)
1 1/2 tbsp Apple Cider Vinegar
2/3 cup + 1 tsp for greasing Cooking Oil (Tel)
1/2 tsp Baking Soda
1/2 tsp Baking Powder

Eggless Plum Cake Recipe

A great way to celebrate Christmas is to make and share yummy plum cake.

Eggless Plum Cake is a cake for all reasons and seasons.

This is a simple eggless plum cake recipe.

When it is Christmas time, the first thing that comes to our mind is CAKES. Plum cake is normally prepared during Christmas. Though it looks simple, but it tastes extremely divine. Plum cake is loved by people across all ages.

This recipe, is an eggless version for the benefit of those people who are vegetarians or are allergic to eggs.

The ingredients are inexpensive and are readily available. This is the first cake that I made in a microwave oven. I have used refined flour (maida) in this cake, you can also use whole wheat flour (gehun ka atta).

The other ingredients are cloves (lavang) , cinnamon (dalchini), green cardamom (choti elaichi) , castor sugar (maheen safed cheeni), milk (doodh), apple cider vinegar (siraka). I have also used dry fruits like cashew nuts (kaju), pistachios (pista) and almonds (badam).

I mixed refined flour (maida) with the chopped dry fruits, so that they do not sink to the bottom of the cake. It takes around 30 to 40 minutes, depending on the temperature you set. Make sure to add apple cider vinegar at the end so that the milk does not curdle.

This cake will be soft and slightly goey.

I started to learn baking in the last one year, I felt like learning this wonderful art as cooking is incomplete without baking. It could be desserts or breads, I want to learn it all and share it with all of you.

Grease the cake tin with cooking oil (tel), sprinkle the refined flour (maida)

Sieve the refined flour (maida), baking soda, baking powder, cinnamon (dalchini) powder, cardamom (elachi) powder, cloves (lavang) powder, cocoa powder together.

Add the half of the chopped cashewnuts (kaju), almonds (badam), pistachios (pista), milk (doodh), apple cider vinegar and cooking oil (tel)

Fold these ingredients gently and pour the batter in the greased cake tin.

Sprinkle the remaining chopped cashewnuts (kaju), almonds (badam) and pistachios (pista)

Preheat the microwave oven at 180 degree Celsius and bake the cake for 30 minutes.

Once the cake cools down, remove it from the cake tin and cut it into desired shapes.
