1/2 cup Yoghurt (Dahi)
3 tbsp Sugar (Shakkar)
1/2 tsp Baking Soda

125 ml (1/2 cup) Water (Paani)
4 Green Chillies (Hari Mirch)
500 ml Cooking Oil (Tel)

Goli Baje, also known as Mangalore Bajji or Mangalore Bonda is a deep fried snack which is crispy on the outside and soft inside.

Goli Baje is extremely delicious and is an ideal partner for your evening tea or coffee.

I have very fond memories associated with this dish. I remember whenever we would feel like eating some comfort food, my mother would prepare Goli Baje. These Goli Baje would fly off the plates in the blink of an eye. This dish tastes best when eaten straight off the frying pan.

This recipe of the goli baje is identical to the ones that you get in hotels. It is a very easy dish to prepare.

Now, let us see how to prepare these lip smacking Goli Baje.

Firstly, take refined flour (maida) in a bowl.

Ginger (adrak), Bengal Gram Flour (Besan) and Sugar (Shakkar).

Green Chillies (Hari Mirch).

Finely chop the green chillies (hari mirch).

Then, finely chop ginger (adrak).

Yoghurt (Dahi).

To the yoghurt (dahi), add water (paani) and Bengal gram flour (besan).

Add the finely chopped green chillies (hari mirch). You may change the quantity of chillies depending on its hotness and your preference.

Now, add the finely chopped ginger (adrak).

Then, add sugar (shakkar).

Add salt (namak) and baking soda.

Add the refined flour (maida).

Mix everything properly and let it rest for at least 30 minutes.

If the batter is extremely sticky, then add a dash of water (paani). Make sure the batter does not turn runny.

Heat cooking oil (tel) in a kadhai (wok).

Dip you fingers in water (paani), take some batter with your fingers. You should dip your fingers as the batter is sticky in consistency and will stick to your fingers if you do not dip it in water (paani). Do not roll the batter between your palms or fingers.

Gently release the batter in the cooking oil (tel).

Once the bottom side is cooked, flip the baje.

Once it is completely cooked, remove it on a serving plate.

Piping Hot Goli Baje are ready. Serve it with coconut or green chutney. You may also eat it as it is, just like the way I like it.

Step 1

Take 1/2 cup yoghurt (dahi) and add 1/2 cup water (paani). To this add 3 tbsp Bengal gram flour (besan), 4 finely chopped green chillies (hari mirch), 1 inch finely chopped ginger (adrak), 3 tbsp sugar (shakkar), 1/2 tsp baking soda, salt (namak) as per taste and 500 grams refined flour (maida).

Step 2

Mix everything properly and let the batter rest for 30 minutes. The batter might turn extremely sticky. In this case add enough water to make a pliable batter. Make sure you do not add too much water and make the batter runny.

Heat 500 ml cooking oil (tel) in a kadhai (wok). Dip your fingers in water (paani). Take some batter with your fingers and gently release it in the cooking oil (tel). Do not roll the batter between your palms or fingers.

Once the bottom side is cooked, flip the bajes. Once they are cooked on both sides, remove them on a serving plate and serve along with coconut or green chutney.
