250 grams Aromatic Rice (Chawal)
250 grams Sugar (Shakkar)
150 ml Ghee (Clarified Butter)
80 ml or 1/3 cup Water (Paani)
5 Cloves (Lavang)
5 Green Cardamom (Choti Elaichi)
2 pinches Saffron (Kesar)
20 grams Raisins (Kismis)
20 grams Kaju (Cashew Nuts)
30 ml Lukewarm Milk (Thoda sa garam doodh)

Kesar Bhath is a delicious sweetened Saffron Rice infused with the flavours of cloves, cardamom and saffron.

Kesar Bhath is normally prepared in the southern and western parts of India. It is a gluten free dish.

This dish can be served as a dessert or a meal in itself. One can also use semolina (rava/sooji) instead of rice as well. In that case, the dish will not be gluten free.

It is a very easy dish to prepare which even amateurs can cook with out any hassles.

This was my maternal grandmother’s favourite dish. She was a great human being and an awesome cook. I dedicate this dish to her. I hope I can do justice to her legacy.

Now, let us see how to prepare this delicious Kesar Bhath.

Firstly, take any aromatic rice (chawal) of your choice.

Wash the rice (chawal) thoroughly with water (paani).

Then, completely drain all the water (paani) from the rice (chawal).

Heat water (paani) in a vessel.

After the water (paani) starts boiling, add the rice (chawal) and let it cook on a medium flame.

The rice (chawal) should be par cooked just like you would cook for Biryani.

Drain all the water (paani) from the rice (chawal) completely and let the rice (chawal) cool down completely. If it is not cooled down completely, the rice (chawal) will break while preparing the dish.

In the meantime, keep cashew nuts (kaju), raisins (kismis), cloves (lavang) and green cardamom (choti elaichi) ready.

Now, take some saffron (kesar) strands.

Take some lukewarm milk (thoda sa garam doodh).

Now, add the saffron (kesar) strands to the lukewarm milk (thoda sa garam doodh). Let it rest for at least 30 minutes.

Heat little ghee (clarified butter) in a kadhai (wok).

Add the cloves (lavang) to the ghee (clarified butter) and stir till they puff up. Then remove it from the kadhai (wok).

Peel the green cardamoms (choti elaichi) and make a powder with the seeds with a mortar and pestle.

Take sugar (shakkar) in a bowl.

Now, take ghee (clarified butter) in a bowl.

Take water (paani) in a cup.

Heat water (paani) in a kadhai (wok).

Add sugar (shakkar) to it. The sugar (shakkar) will melt in the water (paani). Make sure it does not turn into a string like consistency.

Once the sugar (shakkar) melts, add the rice (chawal). Make sure you cook the dish on a medium flame.

Stir the rice (chawal) properly.

Now, add the ghee (clarified butter).

Stir and add the cashew nuts (kaju).

Now, add the raisins (kismis).

Give it a good stir and add the milk (doodh) infused with saffron (kesar).

Stir it properly. Add the cloves (lavang).

Then, add the green cardamom (choti elaichi) powder.

Give it a good stir and switch off the gas flame. Your delicious Kesar Bhath is ready!!!

Step 1

Wash and cook 250 grams aromatic rice like Basmati till it is par cooked. Once it is par cooked, drain the water (paani) completely and let the rice (chawal) cool down completely.

Soak 2 pinches of saffron (kesar) in 30 ml lukewarm milk (Thoda sa garam doodh) for at least 30 minutes. Heat 1/2 tsp ghee (clarified butter) and add 5 cloves (lavang). Once they puff up, remove and keep them aside. Peel and make a powder of 5 green cardamoms (choti elaichi) with a mortar and pestle.

Heat 80 ml water (paani) in a kadhai (wok). Add 250 grams sugar (shakkar). Once the sugar (shakkar) melts add the rice (chawal) and give it a good stir.

Add 150 ml ghee (clarified butter) and mix it properly. Then add the cashew nuts (kaju) and raisins (kismis) and give it a good stir.

Add the 30 ml saffron (kesar) infused milk (doodh) to it and stir again.

Finally, add the green cardamom (choti elaichi) powder and mix properly and switch off the flame. Your Kesar Bhath is ready!!!
