Murmura Laddu is a delicious, crispy, crunchy, light  laddu with the goodness of puffed rice and jaggery.

Murmura Laddu is a very easy and quick gluten free dish to prepare.

Well, murmura laddus are normally prepared during Makar Sankranthi. Makar Sankranthi signifies the end of the winter solistice and the beginning of the summer solistice. This dish is prepared with only 2 ingredients i.e. puffed rice (murmura or kurmura) and jaggery (gud). One can also add other things like roasted chana or peanuts but I prefer it this way, in it’s authentic form. It is also very light on the palette and the stomach.

So, let’s have a look at how to prepare these laddus.

Firstly, take jaggery (gud) in a kadhai (wok) and heat it. Make sure that the flame of the gas stove is low as the jaggery could burn if the flame is high. The jaggery (gud) used to make this dish is sticky jaggery or jaggery used to make chikkis. It is not your regular jaggery. So when you buy it insist on chikki jaggery.

This is how the jaggery will look once it melts completely.

Once it melts, remove it from the gas stove and keep it aside. Immediately add the murmura (puffed rice).

As soon as you add the murmura (puffed rice), immediately stir it so that it gets coated properly by the melted jaggery (gud).

Grease your palms with ghee (clarified butter) and make balls. The size of the balls can be as per your preference. When you are making balls, if after a while the mixture cools down, gently heat it again and make the balls. The mixture has to be warm to make the laddus. You might also find some puffed rice sticking to the bottom of the kadhai (wok). Gently heat it and you can make balls out of it.

Heat 300 grams sticky jaggery (gud) on a low flame in a kadhai (wok).

As soon as the jaggery (gud) melts completely, remove the kadhai (wok) from the gas stove, immediately add 5 cups murmura (puffed rice) and mix properly so that the melted jaggery (gud) coats the murmura (puffed rice) properly.

Grease your palms with ghee (clarified butter) and make balls of your desired size. In case the mixture cools down after a while, gently heat it again and once it is warm, make the laddus. Your delicious murmura laddus are ready.
