Spaghetti Aglio e Olio is an Italian, one pot wonder which is delicious and extremely easy to prepare.

Spaghetti Aglio e Olio requires very few ingredients which are very easily available in any kitchen.

So, Spaghetti is one of the most loved pastas in the world. It is very versatile and these days you also get whole wheat spaghetti for health freaks like me. Algio e Olio is one of the easiest dishes. Even someone who hardly knows to cook can prepare this dish.  Even though it is easy, it is packed with flavours.

To prepare this dish, I have used whole wheat spaghetti so that it is higher on the health quotient.

Now, let us see how to prepare algio e olio.

For this recipe, you will need chopped garlic (lehsun).

Dry red chilli (sukhi lal mirch) flakes.

Cooked spaghetti. I have used dry spaghetti. Follow the instructions on the packet and cook it al dente which means slightly under cooked. You may use any pasta of  your choice.

Take any grated cheese of your choice. Ideally, parmesan is used but since I didnot have it, I used mozzarella.

Last but not the least, you will require dried mixed herbs.

Heat olive oil (zaitun ka tel) in a kadhai (wok).

Keep the gas flame low and add the chopped garlic (lehsun). Make sure the garlic does not turn brown.

Then, add the dry red chilli (sukhi lal mirch) flakes and stir.

Then, add the cooked spaghetti and salt (namak), only if required, as you add salt (namak) while cooking spaghetti.

Stir everything properly and your Spaghetti algio e olio is ready. While serving add grated cheese and mixed dried herbs as per your taste. I like to be very generous with the cheese and the dried herbs.

Step 1

Heat 2 tbsp olive oil (zaitun ka tel) in a kadhai (wok), add 3 tbsp chopped garlic (lehsun), then add 3 tbsp dry red chilli (lal mirch) flakes and fry on a low flame.

Add 250 grams cooked spaghetti and mix properly. Add salt (namak) only if required as it is added while cooking the spaghetti.

After plating, add the grated cheese and mixed herbs as per your taste.
