1 cup (125 grams) Whole Wheat Flour (Gehun Ka Atta)
1 cup (125 grams) Refined Flour (Maida)
2 tsp (Hot Variety) Red Chilli (Lal Mirch) Powder
1/2 tsp Powdered Hing (Asafoetida) Powder
1 3/4 tsp or as per taste Salt (Namak)
200 ml Water (Paani)
500 ml + 4 tsp (20 ml) Cooking Oil (Tel)

Spicy Tukdi also known as Khara Shakarpara or Diamond Cuts is a savoury deep fried snack.

Spicy Tukdi is a crispy, crunchy snack prepared during festivals like Diwali or Deepavali.

Khara Shakarpara or Spicy Tukdi is a very popular snack among the Konkani and Maharashtrian communities. My mother would prepare it almost every Diwali and I used to love it.

Let us now see how to prepare these delicous Spicy Tukdis.

Firstly, take whole wheat flour (gehun ka atta).

Then, take refined flour (maida).

Put both the flours through a sieve to remove lumps if any.

Take red chilli (lal mirch) powder. I have used a very hot variety of chilli powder. You may change the quantity depending on hotness of the chilli powder and also your personal preference.

Salt (namak).

Hing (asafoetida) powder.

Water (paani).

Cooking oil (tel).

Put the two flours in a bowl and make small well.

Then, add water (paani).

Add cooking oil (tel).

Then, add red chilli (lal mirch) powder.

After that add hing (asafoetida) powder and salt (namak).

Make a dough after the salt (namak) and hing (asafoetida) dissolve properly.

Make a ball with the dough.

Roll it with a rolling pin (belan). Try to roll it as thinly as possible.

With a tukdi or shakarpara cutter, make strips.

Now, cut it with the cutter in a slant direction to get diamond shape tukdis.

Heat cooking oil (tel).

Once the cooking oil (tel) is hot, put the tukdis or diamond cuts in the oil and then turn the gas flame to medium. Fry it on a medium flame otherwise the tukdis will burn. Keep flipping it every 2 to 3 seconds so that it fries evenly. There will many bubbles surrounding the tukdis. Once the bubbles reduce to a bare minimum, remove it from the frying pan as the tukdis would be cooked.

Your delicious crispy, crunchy, spicy tukdis are ready. Put these in an air tight container so that they stay crispy and crunchy for a few days.

P.S. It is better to fry tukdis of one chapatti at one time instead of tukdis of 2 to 3 chappatis at once. It helps to fry the tukdis better.

Step 1

Take 1 cup (125 grams) each of whole wheat flour (gehun ka atta) and refined flour (maida) and put it through a sieve to remove any lumps.

Heat 4 tsp (20 ml) cooking oil (tel). In a bowl take both the flours and make a well.

Add 200 ml water (paani), then the 4 tsp cooking oil (tel), 2 tsp hot red chilli (lal mirch) powder, 1/2 tsp powdered hing (asafoetida) and 1 3/4 tsp salt (namak). Make sure that the hing (asafoetida) and salt (namak) dissolve completely. Make a dough. Make balls from the dough.

With a rolling pin (belan), roll the ball as thinly as possible. With a tukdi cutter, make thin strips and then cut in a slant direction to get diamond shapes.

Heat 500 ml cooking oil (tel). Once the cooking oil (tel) is hot put the tukdi in it and keep the gas flame on medium. Flip the tukdis every 2 to 3 seconds till the bubbles around them almost disappear.
