Tomato Omelette is a boon for vegetarians who want to eat omelettes.

Tomato Omelette is made with besan (Bengal gram flour).

It is rich in protein, fiber, iron, potassium, manganese and other vitamins and minerals.

Also tomatoes (tamatar) and onions (pyaaz) add to the taste as well as the health factor.

Since I am a pure vegetarian, I really love this dish. I ate this for the first time at my youngest maternal uncle’s place. My aunt had prepared it for breakfast. Ever since that day, I fell in love with it. Over the years my mother used to prepare it quite often and I would devour it to my heart’s content.

It is also an excellent option for gluten free and vegan food. Moreover, it is also low in calories, carbs and fats. It is very rich in plant based protein. This dish is very easy to prepare.

Now, let us see how to prepare Tomato Omelette.

Firstly, take besan (Bengal gram flour) in a bowl.

Chop onions (pyaaz), tomatoes (tamatar), green chillies (hari mirch) and coriander (dhania) leaves.

Add salt (namak) as per taste and water (paani) to get the desired consistency of the batter.

Heat a tawa (pan) and smear cooking oil (tel) on it.

Pour a ladle of batter on the tawa (pan). You can make a thick or thin omelette depending on your choice.

Cover it with a cloche (dhakkan) and let it cook on a medium flame.

Remove the cloche (dhakkan) after the bottom part is cooked.

Flip the tomato omelette. Do not cover it with a cloche (dhakkan).

Let it cook for a few seconds, till light brown spots appear on the bottom part. Then flip it again and remove it on a plate.

P.S. If you wish, you may also add 1 tbsp of fine semolina (chiroti rava) or rice flour (chawal ka atta) to the batter.

You can have with this tomato (tamatar) ketchup, chutney, bread or as it is without any accompaniments.

Finely chop 1 large onion (pyaaz), 2 medium sized tomatoes (tamatar) and 1/2 cup coriander leaves (dhania). Chop the 2 green chiilies (hari mirch).

Take a bowl of besan (Bengal gram flour) and add all the chopped ingredients to it.

Now add water (paani) to get the desired consistency of the batter and salt (namak) as per taste. Mix everything properly.

Heat a tawa (pan) and smear 1 tsp cooking oil (tel) on it. Pour a ladle of batter on the tawa (pan) and make a thick or thin omelette depending upon your choice. Cover it with a cloche (dhakkan).

Once the bottom turns light brown, flip it and do not cover it. Once the brown spots appear on the bottom side, flip it and remove it on a serving plate.

You may also add 1 tbsp of fine semolina (chiroti rava) or rice flour (chawal ka atta) to this batter. You can eat this tomato omelette with tomato ketchup or any chutney of your choice.
