2 Green chillies (Hari mirch)
1/4 Onion (Pyaaz)
1 clove Garlic (Lehsun)
1 tbsp Grated coconut (Nariyal)
As per taste Salt (Namak)
2 tbsp Butter (Makhan)
1 (Cut into round slices) Cucumber (Kakdi)
1 (Cut into round slices) Tomato (Tamatar)
1 tbsp Water (Paani)

Vegetable Sandwich is one of the tastiest and easiest dishes to make and eat.

Vegetable Sandwich is the ultimate finger food. You can have it at any time of the day and feel refreshed. There are hundreds of varieties when it comes to sandwiches. This recipe is a simple one which is delicious and time saving.

I have been eating this sandwich ever since I was a kid. The combination of the butter, green chutney and veggies makes my taste buds tizzy. The green chutney made from coriander (dhania) leaves along with other ingredients gives it a lip smacking taste. I can have it any time of the day and any number of times. I can never get bored of it.

Now, let us see how to prepare these Vegetable Sandwiches.

Use fresh coriander (dhania) leaves and also use it’s stem if they are tender.

Take onion (pyaaz), garlic (lehsun), green chillies (hari mirch) and greshly grated coconut (nariyal).

Slice the cucumber (kakdi).

Slice the tomatoes (tamatar)

Grind coriander (dhania) leaves, onion (pyaaz), green chillies (hari mirch), garlic (lehsun), freshly grated coconut (nariyal) and salt (namak) with very little water. The water should be just enough for the blades of the grinder to grind the ingredients to a fine consistency. In case it becomes watery, add more coriander (dhania) leaves to get the desired consistency. If you wish, you may also add some mint (pudina) leaves.

Remove the green chutney in a bowl.

Take butter (makhan – home made or store bought) as per your preference.

Take two slices of whole wheat (gehun) bread (you may also use white bread) and apply butter (makhan) to it.

Now, apply green chutney to the bread.

Place the sliced cucumber (kakdi) and tomato (tamatar) slices on the bread. You may also keep sliced boiled potatoes (aloo) and slice onions (pyaaz) if you desire.

Put both the slices together.

Cut the sandwich in desired shapes.

You can eat it with tomato ketchup as well. I prefer to eat it without any sauce or ketchup.

You can use any type of bread. I prefer whole wheat or multi grain bread. I always like to find ways to make any dish as healthy as possible.

It is also a great option for children for their tiffin box.

Take 1 big cup of fresh coriander (dhania) leaves. Use the stem as well if they are tender.

Grind the coriander (dhania) leaves along with 1/4 onion (pyaaz), 1 garlic (lehsun) clove, 2 green chillies (hari mirch), 1 tbsp freshly grated coconut (nariyal), 1 tbsp water (paani) and salt (namak) to a fine consistency.

Take butter or makhan (home made or store bought) and apply it to each side of 2 bread slices. After that, apply green chutney over the bread slices. Place the sliced cucumber (kakdi) and tomato (tamatar) pieces on both slices of bread and place both the bread slices together.

Cut the sandwich in desired shapes and enjoy it with tomato ketchup or without any accompaniments.
